Default Smoked Spatchcocked Turkey and Ground Turkey Stuffed Loaf

This year I was going to try something that came to me on a whim. I thought I would make a turkey loaf.
I took ground turkey and added all the ingredients listed in large mixing bowl. Then I laid it into a wax paper lined cookie sheet. I spread it around with my hand then placed another piece of waxed paper to get it even thickness. I then added some stuffing with sausage some more of the other listed ingredients made an indention and added some canned cranberries with mozzarella cheese. Finally rolled it up and placed it into a loaf pan.
The Spatchcock Turkey I placed on pads of butter in a shallow foil pan. I then injected it with a Lawry’s Caribbean Jerk with Papaya juice marinade. I sifted it through nylon to take all of the clumps out. After injected I rubbed it down with my shake and placed thin sliced fresh oranges over the top and placed in fridge overnight.
Turkey Loaf Ingredients:
• 2 1/2 lbs. Ground Turkey
• ½ c Garlic & Herb bread crumbs
• ½ c Oatmeal
• 1 Egg
• ¼ c Celery – chopped
• ¼ c Onions – chopped
• ¼ c Olives – chopped
• ¼ c Mushrooms – chopped

Turkey Loaf Stuffing Ingredients:
• 1 package stuffing mix
• 1 tube Jimmy Dean sausage ( lightly browned)
• ¼ c Celery – chopped
• ¼ c Onions – chopped
• ¼ c Olives – chopped
• ¼ c Mushrooms – chopped
• Black pepper & Sea Salt
• Sliced Mozzarella cheese
• Sliced canned Cranberries

Both were put on the smokers for about 4 ½ hours with Mesquite Chunk until internal temps reached 180*

















They turned out Great, but with all the guest over I forgot to take pictures of the finished product. LoL… Sorry.

That turkey loaf sounds like a great idea. I forgot to take pics of my turkey and ham before I sliced them up and put them on a platter. It gets pretty hectic trying to serve everything while its still warm.
