Default Zeek's early morning Brisket and CB

I picked up a 10 lb Brisket and got the smoker started this morning, should be ready to put on by 7am est. Winters coming and It's getting cold out here and it might be hard to keep up temps (I guess we will see). Using Oak and Plum with my own bold beef rub. Just going to have a fun day smoking and drinking lol. Also got 12lbs of CB ready, thanks for checking out my smoke...




















Put her on at 7:30am. It is harder to keep temps. I might be in for a long day...





Wrapped CB in a coat of corn meal. Brisket finally hit 150 and hav'in a blast. Got to get more beer. lol














Brisket just hit 170, ready to foil and CB getting a corn meal bark.









CB is done. Brought it to 165 and is resting in my fridge going to slice it in the morning. Took a taste and the freaking corn meal bark is amazing, you got to try it. Just waiting on my Brisket, at 180 now, gon'a be a while for that...Having a ton of fun...Yeehaw...

Wel, ya just can go wrong with Powdered Toast Man saying his blessings over the meat.

Now, let me get my Canuck working here. CB=Canadian Bacon? Is that cured or fresh pork loin? Down here it doesn't get called Canadian Bacon unless it is cured.

Do you guys call boneless pork loin Canadian Bacon either way?

Either way, it all looks great. What is the purpose of the corn meal?
