    Default Smoked Stuffed Mushrooms

    These are most tasty. Meant to be done in the oven, but smoking them adds another excellent layer of flavor.
    I use the white button shrooms available at your local grocer. Nothing says another shroom couldn't be used.
    You could also add finely chopped crab, shrimp, fatty, etc. Endless choices.
    I put them on the smoker at about 350F for 45 minutes or so with hickory for smoke. When done they will have a dark ring around the mushroom just below the stuffing and the mushroom cap will be wrinkled or shriveled in appearance. Really, you are heating them through and adding smoke flavor, not cooking them.

    The Ultimate Stuffed Mushroom


    Ingredients
    1. 20 medium mushrooms
    2. 3 tablespoons butter
    3. 2 tablespoons finely chopped onions
    4. 2 tablespoons finely chopped red peppers
    5. 14 RITZ Crackers, finely crushed
    6. 2 tablespoons grated parmesan cheese
    7. 1/2 teaspoon Italian seasoning


    Cooking Directions
    1. Preheat oven to 400 degrees F. Remove stems from mushrooms. Finely chop enough of the stems to measure 1/4 cup; set aside. Cover and refrigerate remaining stems for other use.
    2. Melt butter in large skillet on medium heat. Add 1/4 cup chopped mushroom stems, the onions and peppers; cook and stir until vegetables are tender. Stir in cracker crumbs, cheese and Italian seasoning. Spoon crumb mixture evenly into mushroom caps. Place on ungreased baking sheet.
    3. Bake 15 min. or until heated through.

    I crumble up some sausage and chop up some bacon, fry it together, stuff in the white button mushrooms. When the mushrooms are ready to be pulled from the smoker I cover them with mozzarella cheese and let that melt before removing. I know it is a simple and quite boring stuffing, but it shore is good!!

    I like that fancy holder ya got for those shrooms. i have used the steel insert from the wooden plate they serve steaks on in some restaurants. Holds the shrooms and lets them sit in some juice (red wine) while cooking. Never tried them on the smoker. I'll put that on the list.

    That fancy holder is for ABT's, but serves well for other purposes.
