    Default Black Iron Apple Cake

    It's hot here today 112° on the front porch in the shade and I was cravin something sweet. Not wanting to crank up the oven I had to look to the UDS so I cranked it up and got it to running at 350° and went back inside to do the prep work. I didn't even think about pictures until I was all finished.



    heres the recipe it can be done in a DO too.

    Ingredients:

    4 whole To 5 Whole Granny Smith Apples, Peeled, Cored, And Cut Into Six Equal Pieces
    1-1/2 stick Butter
    3/4 cups Sugar

    For the cake:
    11/4 cups canola oil
    3 cups all-purpose flour
    1 tsp ground cinnamon
    1 tsp baking soda
    1 tsp salt
    1 cup sugar
    3 large eggs

    Preheat oven to 350 degrees.
    In a 9 to 10-inch skillet, melt 1 3/4 sticks butter over low heat. Add 3/4 cup sugar to the pan and stir around, then place apple slices, wedge side down, in the pan. Don’t pack them too tightly, but try not to leave overly large gaps. Allow this to cook over low/medium-low heat while you make the cake batter.

    Working over a large sheet of parchment paper, sift together flour, cinnamon, baking soda, and salt; gather sifted ingredients into center of sheet;
    In the bowl of an electric mixer fitted with the paddle attachment, combine vegetable oil, sugar, and eggs; mix on high speed until lemon yellow.
    Fold reserved parchment in half lengthwise; with mixer on medium speed, gradually shake in dry ingredients until just incorporated.
    Gently stir in 1 chopped apple.

    Remove skillet from heat. Spoon batter over the top, then spread gently so batter is evenly distributed. Bake for 22 to 30 minutes, or until cake is golden brown and bubbly. Allow cake to cool in skillet for five minutes, then invert onto a serving plate.
