Default I hate to admit it....but

Wow, I committed to doing a brisket for a luncheon at work tomorrow. I just didn't want to fire up the big smoker/stick burner so I opted for the ECB electric bullet smoker that I inherited after my step Dad passed away. To tell the truth, I really kind of like the ease of the cook. Hmmm, could this be my future?

Nahhhhhhhhh, I kind of doubt it either but it sure is nice to not have to watch the fire so carefully! I'll take a pic of the brisket prior to foiling it late tonight!

Always been a charcoal/wood kind of guy, but I can understand the lure of something that easy. And I don't judge those who go that route. Hey whatever works for ya. Better to cook well on electric than crappy on wood!

Well Tom, i doubt I will go electric forever. Tonight was kind of an exception where I didn't have the luxury of devoting all night to the smoker. If I've got the day to burn then I'm sure I'll be back on the stickburner!

I ate at dickey's BBQ in tulsa today for lunch. their brisket was hard, tough, dry and flavorless.

they cooked it on a gas assist Southern Pride smoker.

they didn't have to watch the fire too closely.

    All I'm sayin.

    Good luck Greg!
