Leftover pulled pork? make Burritos.
I have lots of pulled pork leftover from my last cook a couple of weeks ago. While I love a nice pulled pork sandwich with coleslaw on top, my wife not so much. but she does love Mexican or Tex-Mex. so I put together a mexican meal for her and she loved it.
I statred by putting together a salsa/pico de gallo.
I put in one chopped jalapeno seeded and ribs removed. (the wife don't like the heat) chopped green and red bell pepper, chopped sweet onion chopped tomatoes (hard to get good ones in the winter) some chopped cilantro salt and pepper and lime juice.
Guacamole. avocado, onion, tomato, salt and pepper and lime juice. (one avocado was ripe one was hard had to put it in the food processor)
warmed tortilla with Goya brand Mexican rice.
Then black beans. I used Goya black bean soup and added a small can of rinsed and drained black beans so it wouldn't be soupy.
Delicious, succulent, smoky leftover pulled pork.
some shredded Mexican style cheese. ( nothing Mexican about this stuff it was just convenient).
Wrapped it up, served it up with a dollop of sour cream and the wife loved it.

I love a good pulled pork sandwich but sometime ya gotta change things up a little. Great looking burritos, I bet they were awesome!!!

I don't know what the actual temp is, but it cooks the way I want it to, so I don't guess it really matters.
