    Did two chix. Both in a brine for 5.5hrs; 1-1-1 w/sage, thyme, garlic pwdr, onion pwdr, rooster booster, celery salt, and love.

    Then I just threw on some rooster booster and put on smoker at 235. Yep, spatchcocked.






    Wife will pull it tonight so she can get a taste. Oh get your mind outta the gutter you perv's!

    Crops are in. Passed over the combines and rest of the green toys with the grease gun. Weather's cold.
    Time to light off the cookin' toys and rustle up some grub!!!

    And it looks mighty good. Considering it was cooked by a turd.

    "1-1-1" is what I call the cup salt-cup sugar-gallon water, didn't want to type it all out and didn't think anybody would make me write it out.....cept for POS's anyway.

    Weekends are when I can smoke cause I do it in the shop and the help doesn't like to work in the smoke, starts to burn your eyes and I'm too tight to open shed doors to just blow the smoke out. Too tight cause we lose some heat.

    Brisket for wife's family, other for my parents, chix for Christmas gift and wife, ribs were for an extended family Christmas get together(plenty of food so I left them in the pickup and saved for wife/kids), more ribs come'n up for wifes parents, and I think I have to do some fatties and pulled pork. Sad thing is we won't get much of any of it.
