    Default Got a small gig

    Jane came home from work a week ago and told me I'm smoking a butt & a brisket for her company Christmas dinner, a potluck affair, they are in bankruptcy and won't spring for a real party. About 15-20 folks. They are buying the meat.
    It's Wednesday. That would be day after TOMORROW. And I'm doing this out of the kindness of my heart and because I'm a really nice guy. And because Jane said to git-R-done. I said "Yes dear" (Learned that from Buzzards Roost Oscar)
    So. I'm rubbin' & injectin' today, smokin' tomorrow. I'll put on an extra butt for us to have a bit of pulled pork (Memphis style sammie! Yeah!) and FoodSaver the rest for later use.

    Pics & report under beef & pork as I get them.

    I like those kind of company parties. They have always seemed to be more "fun" than spending $30 a person to have a fancy catered or sit down dinner. Before one of my prior employers got bought out by corporate America, we used to have our summer picnic at a park, with myself and a few others cooking ribeyes, pork chops, burgers etc on a 72" Magic Caterer grill the company owned. Keg of beer, and great prizes. That all went out the window once the six sigma blackbelts came in with their "budget reductions" About 1/2 of us got RIF'ed. I hear they get a $10 Walmart gift card in lieu of a party now.....

    20 cubic foot homebuilt smoker
    turkey fryer
    coleman stove
    If it burns, I can cook with it.

    Since you are in such a giving mood make sure to add a few fatties on there too. Just not quite a BBQ unless there is at least one fattie

    I heard that! A fatty just off the smoker has a short life.
