    Default Smoked Cheese and Almonds

    Finally broke out the Smoke Pistol I bought a while back and gave her a try today.

    The cheese.


    Getting the smoke pistol started.


    Gutted the WSM and put the cheese and some kosher salt on the bottom rack. If you look real close you can see the smoke at the bottom of the WSM. Since there is no heat the smoke just kind of sets there and doesn't rise.


    Also got some almonds.


    Tossed the almonds in some buttered and some kosher salt, granulated garlic and some ground chipotle chile powder that was ground in a coffee grinder


    2.5 hours later at 275* and the almonds are done. tossed them in a little more of the salt mixture.


    Cheese and salt done after 2.5 hours too.

    Looks great all the way around John. Do you think that the smoked salt has much smoke flavor or flavor adding propeties to make it worth the while to do it?

    It's definitely a good time of year to get in some smoked cheese. Thanks for sharing your pics with us.

    Yeah it is the time of year again looks like a sucessful cook, I have to do up some almonds. Those would go very nicely with a glass of merlot and some of that chedar*
    Be kind to me, it's not my fault I'm a "PORK-A-HOLIC"!!

    Isn't it cool the way the smoke doesn't rise, but instead actually falls?

    Some how I knew a shameless plug was coming . I can smoke cheese in an old gasser converted to a hot plate cheese smoker in the heat of the year ... but the pistol and cooler would be easier for sure
