    Default Smoky Okie Made me do it :)

    Couple of new toy's

    1 A Stainless Steel flavor injector.
    2 A pound scale / we didn't have a pound scale but a gram one.
    Now we have a pound scale.


    Washed the injector and I've trimmed it up some more.


    Flavor added.


    Rubbed.


    Wrapped up, and put in the fridge for 24-29 hours more.

    So far so good, hay how was the injector? Mine is shot and I need to get one pretty soon.

    This is the deal.

    Disp[osable if you like and affordable as well. what's more, It doesn;t tear your meat up, nor does it leave a nice wide channel for your imject to bleed right back out through.

    Nice scale Derek. You won't regret the investment. Will it switch over to grams as well?

    Sniznit, I would listen to smoky, I had a little trouble getting this one to work properly and look what it did with the brisket.

    Smoky, Thanks this is my second brisket doing it you're way.

    Tomorrow I will be doing a few more things to it before it goes on the ole smoker.

    I hope I could leave this brisket like it is in the fridge for 40+ hours but no more then that.

    Tomorrow is a sausage smoke.

    Derek, what you have there is a flat, If you sear it, be sure not to sear it very heavily. It isn;t a thick enough cut to stand up to a heavy sear.

    Just a caution.

    I'll do a super light sear. But you think it be OK in the fridge for 2 day's even?

    Do I can get my sausage done and then do this one?

    It would be fine in the fridge for several days if it needed to be!

    Ok thanks bud.

    I am glad, because I wanted to get it seasoned, wrapped, refrigerated.
    So tomorrow is sausage smoking day and I will be smoking the sausage around 170-180 and ramping her up ( not down to 225.f )

    And then freeze them after they cooled off for a while.
