    Default Indian-Spiced Chicken Pitas

    Our daughter asked us to prepare and grill chicken breasts for her pita recipe and she would do the rest.
    Chicken prep: (this is for one pound of chicken - we did two pounds) Sprinkle chicken with one teaspoon garam masala and 1/2 teaspoon salt. Place the chicken on the grill rack or prepared pan and cook until no longer pink in the center and an instant-read thermometer inserted into the thickest part registers 165F
    We had to assemble, roast and grind the Indian spice Garam Masala because it is not available in any local stores.


    Add spice to 2 lbs. chicken breasts

    TBE is running more than 500 degrees so time to grill.


    Grilled 10 minutes per side.

    Internal temp is at 165 degrees. I over shot because I wanted to pull at 160 and let the temp rise.

    The above was our portion of the prep and the rest is our daughter’s which she will do tomorrow after letting the chicken cool overnight in the fridge.
    Combine cucumber, yogurt, cilantro (or mint), lemon juice, the remaining garam masala, salt and pepper in a small bowl. Thinly slice the chicken. Split open the warm pitas and fill with the chicken, yogurt sauce, lettuce, tomato and onion.

    If it's as good as it sounds, you ought to try it with lamb.

    We can find you a source for the garam masala as well if you decide to make it a staple.
