    Default Hello from West Virginia

    New guy checkin' in from West "By God" Virginia. New to the smoking thing and just picked up a WSM last week.

    Tried my first cook on Sunday with a few racks of baby backs and they turned out ok, not quite as tender as I'd like but good taste. I think I just need to leave them on a little longer. Sorry forgot to take pics as I was hovering over the cooker watching the temps. The WSM held the temps well and only lost 25 degrees when a storm came through.

    Anyway, hoping to learn a lot from y'all!

    Welcome Andy. We'll forgive ya on the lack of pics *this time* haha

    you will need a remote meat thermometer. On a WSM, opening the lid to look costs you temperature for 5-10 minutes. You don't see it on the dial that came with the smoker because they react real slow. Just say to yourself "If you"re lookin, ya ain't cookin" to remember that fact, and take on a strict no peeking policy.
