Salt Lick, Round Rock location
The Salt Lick has three locations as of this writing. The original is out near driftwood, and is famous for it's "Bring your own beer" policy and laid back attitude. The one at the airport is pretty much the polar opposite, designed for a quick turnaround lunch for travellers. The round Rock location is inbetween the two, and the one that I visited.
Here is me on the right, and the pitmaster taking inventory of what was left in the pit after closing time.

Sausage - very good    
Brisket - so so, was a little on the lean side so it did not "soften" well under smoke. Nice smoke ring.  
I thought both of the above were a little bland on the flavor, but their habanero sauce made it tingle in my mouth. I think you could put some of that on a pile of rocks and serve it up, and folks would ask for more please. It was not hot at all, but tons of flavor with a hint of vinegar. It is a mustard based sauce.

Ribs were a tad dry (after all I came at 8:45 PM) but the flavor was perfect. I sampled the sauce on them and felt it actually detracted from the flavor a little bit, so I went on commando from there.
