    Default Double smoked Sockeye w/the Smoke Pistol

    We decided some fish was in order tonight, and we had a nice sockeye fillet

    I drizzled a little lemon juice over it to firm it up, as much as flavor it, then gave it a good dose of Seafood Splash.

    I put the Smoke Pistol on the Hasty Bake with an alder cartridge and cold smoked it for about 3 hours. Meanwhile, I fired up the Backwoods and brought it up to temp.

    After the three hours or so of alder smoke, I put it in the heat (225°) with a little alder wood on the fire. I also figured that since there was still smoke left in the Smoke Pistol cartridge, I might as well shoot it into the Backwoods and supplement the alder wood.

    Here is what we did:

    Seasoned and lemon juice



    On the Hasty Bake with the Smoke Pistol



    Here is the Smoke Pistol set up



    Here it is moved to the Backwoods



    And the smoke coming off the Backwoods



    Finished fish



    And then on the plate with roasted veggies and tomato salad



    Sure was good.

    I am lost?? Smoke pistol??? Is that the thing that takes the pre formed wood disk and dispenses them as needed?
