    Default New to "real" BBQ and "The Joint"

    Hi all,
    My name's Steve and I'm new to real BBQ. Grilled a lot but never really bbq'd until last weekend when I tackled 6 racks of spare ribs. Friends and family really enjoyed them but I have plenty of room for improvement. That's where you come in. I hope to glean a lot from here so to make bbq'n fun AND tasty.

    I replaced my old grill with the Char Griller Duo. It did well with the ribs but since I have to "learn" the grill I went ahead and added the side fire box last night so I only have to learn it once. I'm located at 4700' so the air is a bit thin. I'm thinking of trying baby back ribs this weekend as my next step.

    Anyway, glad I found The Joint and hope to learn first and contribute later.

    Welcome to the joint! There are a lot of post on anything you can Imagine so just read alot and if you have any questions ask. Someone will give you an answer.

    to the "JOINT" Glad you found us and YES there are lots of good post with tons of information that will allow you to glean helpful ideas. I would use the 2-1-1 method on Babybacks and keep the temps around the 250 mark. After the 2 or 2 1/2 hour in the smoke I foil and add a couple ozs of apple Juice to the foil for an hour or so. Unwrap and place back on the smoke for a while until done. If you do sauce now is the time however I always serve head Country on the side. GOD LUCK and again.

    to The Joint! You ought to be able to get all the answers you need here...and then some too.

    If you have difficulty getting the SFB to run and burn right, there is plenty of info here as to easy mods to make it work better for you.

    Welcome to the Joint. I am just a little ways from Sacramento, and come to Reno once or twice a year to race at the NNKC kart track.

    I don't know how to cook on a SFB, but I know how to taste-test
    I am in shape. Round is a shape.

    ... be prepared fro great smokes from now on and more cooking . They will start asking for you to smoke . ie cook all the time .. But it's all good .

    Welcome to The Joint SteveM! Great to have ya with us buster. The Duo is a good cooker. Make ya a charcoal basket for the SFB and a deflector to keep the heat moving to the other side of the cooking area.
