Default Sesame grilled yellowfin tuna loin

A good friend recently returned from the gulf with a bunch of redfish and tuna.

Seems he though enough of me to bestow a bunch on me, and I finally got around to cooking some.

I vaccu marinated this one in a soy/mirin blend with dark sesame oil, wasabi, sriracca, garlic, ginger and lemon grass.

After about 30 minutes, I drained it, dosed it with sesame oil and rolled it in sesame seeds, then grilled it over a very hot fire for about 5 minutes total.

It came out just like I wanted it, rare as he!! with a slightly warm center.

The dipping sauce is just reserve marinade that didn;t go in with the fish.

Most excellent fish. It smelled like beef when I brought it in the house.

Great lookin' tuna. Done just right.

I see you're getting around to using that big bottle of Mirin, that you said you had in the back of the pantry.
    It's good stuff.

Tuna looks great and cooked just perfect with a slight sear.
