    Default The Wife's Shrimp Ceviche

Came home from work tonight and the wife made ceviche for dinner tonight. Only thing missing was the ice cold Tecate. Coors light had to do.

That looks great and remember that Coor's Light has been KISSED by the mountain Gods and is filled with mountain spring water. Good stuff if there ever was. LOVE ceviche, I make mine with shrimp, scallops and conch (when I can find it). Some time I can find haddock and use it along with the scallops and shrimp.
