    Default I Guess it Happened After All

    I thought this Butt cook might have just been a fleeting dream since I failed to get pics. No prep pics anyway. Just a few final shots.

    I was talkin' to the neighbor lady across the street a few days ago and she reminded me just how long it's been since she had my Q and tater salad. So I invited her to join us the following weekend for brisket and tater salad.

    So as time drew hear, I dove into the freezer for the one remaining brisket I had. But there was a butt in there that really needed to be used first as it was not packaged for long term freezer storage. So I thawed it and rubbed it with Head Country. Then injected with Tony C.'s Creole Butter on Thurs. morning and left 'er in the fridge with a plan to cook on Sat.Well one thing led to another and I just didn't get around to it til Sun. Three days to marinate...bummer!

    I was gonna go low & slow, but when the drum temp crept up to 300, I said "what the Hell? I'll getter done early!" So I let it go til it got all darky and barky, then foiled to 197 deg..Rested in a towel in the Igloo for a couple hrs. Then pulled just in time for the Mamas to show up. It was Mama's Day after all.

    Finally got around to the photography after it was done. Here's what it looked like.



    Pulled enough to get started.



    My plate with slaw and Gourmet Potato Salad.



    Lot's of leftovers, so I took some to work today. Glad this thing turned out to be for real!

    It looks moist to me.

    I want to hear about this potato salad... "Gourmet" even.

    Would you mind posting the recipe for the potato salad?? I love a good potato salad.

    This is my mom's recipe; probly her mom's recipe. Sorry, I don't measure. I add the ingredients "to taste". Play with it til you get what you like.
