    The wedding that I volunteered to cook for has gone form a couple hundred to as many as 400. I don't have my Backwoods Piglet Plus any more ( thanx tho the trailer thieves), so I needed a big cooker..

    I called my friends up at Cookshack and made arrangements to use one of their large capacity Fast Eddie's Cookers.

    It is an incredible cooker and I thought that you would all enjoy seeing it and that they would also enjoy you seeing it as well.

    For the record, we won first place in brisket the first time we cooked on one of these in a competition.

    Here it is:

    Front view:



    As you can see it is on its own custom torsion axle trailer. The unit can be lifted off the trailer. and set on casters or just on the floor.

    Side view. You can see the hopper for the pellets, and the housing for the carousel works:

    In the middle is the convection fan housing, and lower left is the access to the pellet burner area.

    Here is a shot of the pellet burner area. As you can see, there is a lot of room in there and you could lay a stick or two of wood over the fire cup if you wanted as well:

    There is a carousel rotisserie inside with five carriages, and each of them holds three racks, for a total of 15 racks. Tne unit is designed to cook up to 300# of meat at a time, but I imagine that you could cook more than that if you could fit it in. To quote one of the top management folks there, "One thing about us, we don;t build any crap here." That says it all. This thing (like all the stuff they build at Cookshack) is built like a brick you know what house.

    I fired this up just to refresh my memory of the unit and was once again impressed. It took about 20 minutes to hit 225, but I wanted to cook hot tonight, so I set it to 325. It took a little over 45 minutes to get there.

    That is nice for sure. Just one burn pot will take care of the whole smoker full of cool meat? That would be real impressive.

    The smoker looks awesome, but I would be scared to haul it around on that little trailer! Cookshack makes some impressive equipment, and their customer service is second to none!

    That IS an impressive machine. I won't even pop off about it being a pellet cooker or anything (I must be getting soft) I'd like to have a smaller version. I really like the rotiss idea on a smoker.

    Thanks for sharing this wonderful cooker with us. Have you got someone to get pics of your activities at the wedding cook? I figure you'll be kinda busy at points.
