For a mix to dredge the fish in with the egg wash, try mixing this, it's light and gives a good taste.

    1 cup all purpose flour
    1 cup white self-rising cornmeal
1/2 cup plain bread crumbs or Panko
I will try that. Thanx for sharing Jim. What name would I look for the white self rising corn meal under? I don't know as I have ever seen that before.

Never seen or heard of smelt, but sure looks good.

Mistakes - It could be that the purpose of your life is only to serve as a warning to others.

We used to net them every year on the southern shores of lake michigan, sometimes they would be good runs and sometimes bad but we always ended up with fish. I was the youngest outta our crew so got stuck with cleanin as the fellas provided the tools and experience, and the beer, .

We have had real good luck lately using Henny Penny beer batter. We get it in 5# bags from the local VFW.
