    Default Smelt and sweet tater fries

    Bought some smelt the other day.
    First batch I did I did a beer batter dip and we didn't much care for it.
    Sweet tater fries turned out great.

    Last night fried up the rest of the smelt with just a dry dip and it still didn't taste like the ones my grandmother used to fry up for us.

    Here are a couple smelt that I washed and dried on paper toweles.

    Sweet taters in an ice water bath for 30 minutes.

    Smelt frying in the peanut oil.

    Fried food in small batches and kept on a cookie sheet in the oven to keep warm.

    I love smelt, but we just don't ever see them around here any more.

    I always used a tempura style wet batter.

    Gotta love the sweet tater fries. Have you ever made chips?

    What do you think was the difference between your smelt and your Grannie's?

    Ive never made the chips in the deep fryer.

    My grandmother did a coating of flour, egg wash and then a recoat of flour.

    I used a wet batter a couple days ago......McCormicks golden batter for fish.
    I used beer instead of water and we didn't care for it much.

    If I can get some more smelt I may try McCormicks again w/o beer and see how that works.

    Can you get Fry Krisp batter mix up there? My inlaws in Illinois use it alomost exclusively and it seems to do a good job, plus it's cheap in the 5# BAG.

    I'm a big fan of smelt. When i was a kid we would get trash cans full of smelt. Cleaning them sure sucked but it was worth it.

    As cheap as they are, I don't think I could imagine cleaning them.

    Looks good. Love sweet-tater fries. Did you double fry them???

    For a mix to dredge the fish in with the egg wash, try mixing this, it's light and gives a good taste.

    1 cup all purpose flour
    1 cup white self-rising cornmeal
    1/2 cup plain bread crumbs or Panko

    They were $6 bucks a pound cleaned.

    To get to where they run from my digs is about a 3 hr. drive one way.
    Figure in cost of fuel ect. me and ma don't eat that much anymore so we just snagged some at our local Meijer store from there fish counter.

    Cleaning smelt is very easy, a pair of scissors and your finger.
    We would clean them and put them into those old half gallon waxed paper milk containers, fill them with water and then into the freezer.

    Thanks for your recipe, bet it will work on any fish.
    We get Drakes batter mix.....Michigan made product.

    Wondering if a dry mix of that and flour would work?
