Default Saturday St Louis style ribs....Sauced

I thawed a couple of racks of ribs on Saturday. I hadn't ever trimmed them into St. Louis style ribs so thought I'd give it a shot. Put on my rub and cooked using pecan between 250-275 degrees.

    RUBBED AND READY

    SMOKED AND SAUCED

I usually don't "sauce" my ribs but was looking for something different. After some good advice from you folks, I mixed some head country bbq sauce, yellow mustard and honey together and sauced them maybe 20 minutes or so before taking them off the smoker. I was very happy with them. The sauce/mustard/honey combo hit the spot.

I threw in some abt's stuffed with grilled chicken and pepper jack cheese and, as always, wrapped in bacon. They were great. Well, the one I got was great. My son ate every other one of them. Dang kids!

Thank you sir. I'm enjoying experimenting with a few different things to come up with something a little more unique. I really liked this combo!

I am very impressed with the looks of that smoke and would LOVE to do a taste test.
