    Default Good jewish tater pancake .

    Potato Pancakes)
    1-1/2 lbs. Yukon gold potatoes, peeled
    8 oz (about 2 large) carrots, peeled
    8 oz. (about 2 large) parsnips, peeled
    1/2 cup diced onion
    1 Tbsp. part-skim ricotta cheese
    1/2 cup egg substitute (such as Egg Beaters)
    2 Tbsp. extra virgin olive oil
    Kosher salt and pepper to taste
    Preheat oven to 350 degrees. Spray a 12-cup muffin pan with nonstick spray.

    Grate potatoes, carrots and parsnips. Working in small batches, press tightly between paper towels to squeeze out excess moisture. Transfer to a large bowl. Combine with remaining ingredients. Scoop mixture into muffin tins, packing down firmly. Bake 45-55 minutes until golden brown.

    Also goes good with brisket.

    I haven't had potato pancakes in years. I might have to try your recipe but I don't think I have ever tried parsnips before.

    They don't really sound like "pancakes" cuz they are in muffin tins, but they do sound good. Do they get all crunchy and brown around the edges and on the bottom?

    You saying grease the muffin tins with Crisco instead of spraying w/ Pam?

    Also known as the Latka. I've found that what makes them really great is to run both the potatoes and the onions through a course grate. Then (separately) spread the grated veggies over a colander for about an hour with some salt. This will extract the moisture and make nice cruncy cakes.
