    Default Black Bean and Corn Salsa

    Anybody have a good recipe to share?

    Buy your favorite salsa, add a can of drained corn and a can of drained black beans.......

    Do you want a cooked product or fresh Brian.

    I never recorded a recipe for salsa. It's too easy to just add as you go until you get where you want.

    This time of year, start with diced roma tomatoes, onion, garlic.green chiles, and or jalapeños, cilantro. Add ( I prefer NIblets or Summer Crisp) a can of drained corn and a can of drained beans. I also like the flavor of poblanos in salsa.

    Add lime juice, a little tomato juice, a litle white balsamic vinegar, maybe a sprinkle or two of olive oil ( not EV)

    Season with black pepper, cumin, salt, and even maybe some powdered NM chilis..

    You could also add some diced avacodo, crushed drained pineapple, diced peaches......

    If you want to use canned maters, I am partial to the Delmonte mexican recipe brand, but they have no heat.

    Not a recipe, but maybe with this info you could come back to us with one?

    We could call it Q Joint brand.

    I'm going with Tim on this, no recipe needed really. Grilling fresh corn adds another layer of flavor too. (if you can get it)

    Oh yes! grilled ( slightly blackened) or smoked fresh super sweet corn wins every time!

    Do what Tim said, except leave out the garlic and green chile's...grill the corn like Bubblehead said also...it will be good, it will be hard for it not to be good

    We were in a little bit of a crunch, so I googled the recipe. Found one at Cooks.com and it turned out really nice!
    I've already thought of tweeks for the next time we make it, but here is what we made...
    1 15 oz. can black beans, rinsed and drained
    1 11 oz. can whole kernel corn, drained
    1 t minced fresh jalpeno pepper
    1 avacado, chopped
    2 medium tomatoes, chopped
    1 red bell pepper, chopped
    1/3 c. chopped fresh cilantro (or subst. 1 t dried cilantro)
    1/4 c. diced red onion
    1/4 c. fresh lime juice (about 2 limes, squeezed)
    1 t. salt
    tortilla chips for dipping
    Combine all ingredients except avacado and chips. Cover and chill for at least two hours. Add avacado just before serving. Serve with chips.

    2 (15 0z) Cans black beans (rinsed & drained)
    1 (15oz) Can whole kernel corn (drained)
    1 Tomato (diced)
    1 Red Bell Pepper (diced)
    1 Small purple onion (chopped)
    ½ Cup chopped fresh cilantro
    ½ Cup chopped fresh parsley
    1/3 Cup margarita mix or lime juice
    ¼ Cup olive oil
    3 Cloves garlic (chopped)
    ½ tsp Salt
    1 tsp Red pepper flakes
    ½ tsp Black pepper

    Combine all ingredients and refrigerate for 1 hour.
