    Default Pecan Smoked Pecan Rubbed Potato Smied Catfish

    I received a sample of some pecan rub from a friend and decided to give it a go on some catfish from my freezer stash.....



    Used my drum with a bit of pecan...



    made some apple dumplin's...



    I threw in a spam and some veggies...



    After an hour of smoke I rolled the smoked fish filets in shredded potatoes....



    and fried til crisp....








    The crispy fried fish...




    The smied (smoked/fried) pecan rubbed catfish.



    the smoked apple dumplin' with ice cream and chocolate caramel sauce...




    I loved the pecan rub!

    Fantastic. I just cooked some SPAM this past weekend but I haven't ate any since I was a little kid before that. I used half of it in some fried rice and the other half in some red beans and rice. Spam is starting to grow on me again.

    Spam, made right here in Minnesnowta. Gotta be fried crisp though. Whats not to like about it? Its spiced ham. Its better than that potted meat byproduct in a can crap some of you were speaking highly about on the other thread. Canned dogfood is better than that.
