    I don't know what the actual temp is, but it cooks the way I want it to, so I don't guess it really matters.

    Thanks all. The shovel and fire will work in some cases.Hoe cakes!! But I want to do smoked things and I think I can fit in some Chinese food too.After all,the wok has been around for centuries.!! Not sure when it was introduced here. JT

    The chinese railroad workers are too late and Marco Polo is too early.But I will try to fit it in some place.Maybe a world traveler.Captain Cook?Magellian? I have to get my time periods correct on this. Jeff
