    I don't know what the actual temp is, but it cooks the way I want it to, so I don't guess it really matters.

    I do not buy meat at WalMart but do at Sam's. They have a full staff of buthers and do a good job on their meats. Always willing to slice as you like. I buy full Beef Tenderloins and have them sliced at 2" - 2 1/2" and have never had a bad one yet. Proabaly done at least 10 full tenderloins. Their Butts are also great. I also buy thr three pack of Baby Backs.

    Under $9/lb for USDA choice Angus tenderloin. Tough to beat!

    As to the butts, you will like them until you try some Berkshire pork.

    PLEASE do not confuse the "meat slicers" you see at Sams to actual butchers. Huge difference.

    Bubba: YES you are right, I only ask them to slice a certain thickness or ask them to cut into halves, etc. Not real butchers but they do sell good meat IMO . The Angus Tenderloins are just fantastic and my TEC/CB Infrared does a great job of cooking one. I refuse to buy pre-packaged meat at WalMart or anywhere else for that matter and only in rare circumstances do I ever freeze fresh meat.

    I don't buy cut meat there. Only primals and subs.
