Default Pizza pies and pizza pockets

I'd forgotten about these pics until I saw Jim's Pie for Dinner thread. It reminded me of these pies.

All told, we made 3 pizzas. We had dough for a 4th, but I decided to play a bit, with mixed success.

First up, a nice pepperoni pizza. The pepperoni is under the extra cheese.

Next up, the kids' new favorite, Canadian bacon and pineapple.

How about a 1/2 cheese, 1/2 C-bacon/pineapple/jalapeno? The peppers really make a big difference in the flavor.

Next up was my fun. We took the last bit of dough, rolled it out, and cut it into 4 wedges. From there, I filled them with sauce, cheese, pepperoni, C-bacon, and pineapple.

After folding and sealing the edges, I brushed the tops with a mix of butter and garlic salt. (Next time, I'll use plain garlic butter. These were too salty for our tastes.)

A small slit in the top, and we're done. Bring on the heat!

Done. time to chow done and see how I did.

I'd offer y'all a slice, but a slice is all that was left.

The dough was homemade. Marie went to a class on pizza and bought some 00 pizza flour. It makes a difference, I can tell you.

I took a pic of her recipe sheet from the class. It's a thumbnail as the pic is loaded full-size on Imageshack.

The pockets were fun, but *very* labor-intensive. Not to mention trying to load them onto the pizza screen without tearing them apart. But they were delicious, and dipping them into extra sauce was fun. Big from the kids.

Sometimes I do it on the grill and sometimes I do It in the oven. I guess it depends on If I need to get in touch with the little Pyromaniac that live in my head. But I will Say that nothing compares to the flavor of a Pizza cooked over wood coals. It is magical.

We do that in the Sandman household. The MIL does the homemade dough, but the Boboli works great for us for a quick meal.

Speaking of the kids, we were discussing dinner one night. I said, "I can make spaghetti, pizza, ..." The rest was drowned out by a loud kid chorus of "SPAGHETTI PIZZA!" Haven't done it, yet, but I promis pics when I do.
