I was asked to share some recipes so I'll start off with my version of Country gravy. . .
DUTCH’S GOURMET COWBOY GRAVY
Ingredients:
1 pound chub of Country Sausage or Hot Italian Sausage
1/2 Medium Onion, chopped
1 tablespoon of chopped garlic
2 tablespoons flour
1 12 ounce can Evaporated Milk, divided
2-4 ounce cans sliced mushrooms, drained and coarsely chopped
Directions:
In a cast iron skillet, brown sausage and then add the chopped onion and sauté until tender-4-5 minutes then add chopped garlic. Stir in flour and cook together until flour turns a light brown. Stir in half of the evaporated milk, cook and stir until everything thickens up. Stir in remaining milk and add the mushrooms. Continue to stir until mixture reaches the consistency that you like. Serve over biscuits or Country Fried Steak.
You can use a fatty for this recipe. Since a lot of the fat may have rendered out during the smoking, you may need to add some additional vegetable oil to the pan in order to sauté the onion and garlic.
