I don't know what the actual temp is, but it cooks the way I want it to, so I don't guess it really matters.

I own 4 smokers, but really only use the biggest anymore and that's my Brinkman SnP Pro w/SFB. I'm in the middle of doing some baffle and tuning plate mods on it to cool it down near the FB.
I'm seriously thinking of building a UDS and I've been promised a 275 gallon oil tank that I'd like to lay flat, add a SFB to it and use one of my other brinkmans as a add on vertical smoker or a warming chamber.

Up until the last couple month since I found a few online Smokin boards, I was only an on again, off again smoker basically smokin' a couple times a year to do some turkeys, a few ribs and some jerky. Now however just the other day I did my first pork butts and a couple different fatties which I'll soon post pics of on the appropriate forum here.

I hope to learn a lot from you folks. Maybe some can make my two new builds go alot easier.
Looking forward to talking with you all and getting to know you.

Thanks for all the welcomes guys. I do have my eyes peeled for a 55 gallon drum and a 30 gallon too. I'm thinking of lining the 30 with fire brick to use as a fire box for the 275 gal oil drum. Unless I can find something better.

Not sure what Bubba meant with his 4 cute little asterisks, but I bet it wasn't nice. Better keep your eyes open Bubba, I may be slippin' sumthin' into the water you boil yer ribs in at the next comp I see ya at.
