    Default Anything Butt...

    So...how many servings to set up for the judges?? was thinking about a filet item..but dont' wanna spend $200 in food for that....

    I don't know what the actual temp is, but it cooks the way I want it to, so I don't guess it really matters.

    I judged a contest that had a steak category.

    They served a whole ribeye for appearance, but they also cut one up into 6 nice sized pieces. The carefully placed a sunnyside up egg on the whole ribeye, and a sunnyside up quali egg on each of the pieces. the whole table gave em nines.

    so filets and lobster its NOT....!! ha... going with plan b.. fatty of sorts with homemade sausage...

    will take lots of pics.. our first comp. i'm itching to get set up already and its not till the 11th.. dagnabit. just found out they axed the sauce and peoples choice this year. also this year the fees are up to 75 a category for the backyard division. in years past its been 50 with meat. last year they got 10 racks and 8 butts. that woulda been worth the entree fee just to get the meat and go home.. to hell with cooking.. ha. not this year tho. dammed stock market. oh well.. meat i got. or can get.
