    Default Dutch Oven Chicken Quesadilla Pie

    This recipe will feed 10-12 people, it's a lot of food! It's also great as a left over warmed up with some salsa!

    The basic recipe will get started...feel free to add some jalapeños and such!

    Ingredients:
    (5) lb. chicken breasts, cut into stir‑fry-size chunks
    (2) medium sweet yellow onions, chopped
    (2) green peppers, chopped
    (1) large yellow squash, cubed
    (1) 19-oz. can enchilada sauce
    (25) small corn tortillas
    (2) lb. shredded cheddar-jack cheese
    (1) 16-oz. can black beans
    (1) 16-oz. can corn kernels
    (3) boxes Jiffy Cornbread Mix
    (3) eggs
    (1) cup milk

    Step 1: Sauté chicken, onions, green pepper, and squash.
    Step 2: In a 14-inch Dutch oven, layer enchilada sauce, tortillas, cheese, canned ingredients, and cooked chicken-and-vegetables mixture.
    Step 3: Mix cornbread according to box instructions, and spread over the top.
    Step 4: Bake for 1 hour using six to eight coals on the bottom and a tight ring of coals around the top.

    Remember to turn your lid half-way through!

    I made it Sunday before last for dinner and everyone seemed to love it! Sorry no pics this time around.

    No Pix, Didn't Happen!

    W/o the pix, you're just talkin' about the recipe.

    Although it does make me wish I had a 14" oven.

    Well shucks, Smoky you sure are hard on a guy! Would you accept as proof, sworn affidavits from EIGHT of the recipients of this culinary delight?

    You sure don't want to try this recipe as is in anything smaller than 14' oven...cause it fills it right up to the lid. Would like pictures of my oven as proof?

    That's Bubba's rule. It's been a kinda unwritten rule here for quite a while.

    Actually, I'm sure that its only there to encourage folks to post pix cuz we all live for them

    Now, the best way to prove that it happened would be to make some, take pix and post them.

    A 14" oven filled to the top is a bunch-O-grub! Cowabunga!
    The recipe looks really good.
    Shame it never happened.
