Try put'n some cheese and sausage in them, I hear it's good.

I saw a utube vid where they put oysters(could use clams also I guess) in the peppers and wraped in bacon. grill hot'n fast so not to over cook the oyster or pre cook bacon. Try other seafood? Just some ideas.

Bread crumbs, shrimp chunks, BBQ sauce ( for sweet and flavor) mascarpone and fresh mozz cheeses, oh, and some crumbled Italian sausage.

Boat style..filling a mix of crushed pineapple, cream cheese, and dust with cracked black pepper. Then put a whole shrimp, slice of ham, or a slice of brisket on top the filling, then wrap with the bacon.
