    Default Basic chicken tacos

    Nothing fancy tonight, just a quick meal.

    Had to go to a meeting for my kids' soccer teams, so we needed a quick meal fit for everyone. The kids decided on chicken tacos, so I thawed some shredded BCC meat and went to work.

    The meat itself is about 2 cups shredded chicken, white and dark meat. I gave this a rough chop and threw it into a hot, oiled skillet over my fryer flame. After a quick stir-fry to get some carmelization, I added 1/4 cup chicken broth, a few dashes of hot sauce, and about 1.5 tbsp rub. I stirred this until the broth just evaporated from the pan, leaving moist chicken.

    Served it with refritos, homemade guacamole and cream cheese queso dip, lettuce, shredded cheese, and picante. Options were as soft or crunchy tacos, or on chips as nachos. Not bad, and the kids approved.

    Chicken. The pieces broke up as I stirred them, which made it easy to serve up to the kids.


    Plated up. The guac is on the taco. Sorry.
