    Default Smoked Stuffed Mushrooms & Others

    I make The Ultimate Stuffed Mushroom, very good! Normally done in the oven for 15 minutes at 400F. Today I made a bunch and put them on the smoker at 350F with hickory. I left them on 40 minutes.
    These are the best yet! The smoke adds another layer of flavor that is outstanding!
    We tried them with alfredo sauce and a sprinkle of smoked paprika, they were OK, but we prefer them as they came off the smoker with just the smoked paprika. Next time I will add some ground up shrimp.
    I also made some baby portabellas - sprinkled with Daddy Hinckels Sauce and his dry rub then put them in a ziploc bag with a fair amount of EVOO and let them marinate a couple hours. Dumped the whole thing into a foil pan and on to the smoker with the stuffed guys. They could have stayed a while longer and been smokier, but they were sure tasty!
    Here are pics of the stuffed shrooms. First is the batch ready for the smoker. Second is a close up before smoking. Third is the batch just off the smoker. Fourth is a close up of the smoked shrooms.
    These babys are good!

    Looks great, Mike! I like stuffed Mushrooms! Any chance of posting a detailed recipe for the Ultimate Stuffed Mushroom?

    Those shrooms look awesome Mike. Is that a secret recipe or can anyone do em? One of these days I'm going to have time to fire the smoker up for any 'anything and everything goes smoke'.

    Well, I'm sorta guarding it right now, I have plans to use it at an event. Maybe after that.................

    Did the ones on the chili grill have any more smoke flavor than the ones on the foil?

    Nope, all the same. Just used the chili grill to keep the smaller ones from rolling over.
