    Default Double Smoked Easter Ham

Picked up an nice 8.5 pound ham to double smoke for Easter.

    firing up some charcoal

starting to fire up the Spicewine....using a mix of half briquettes and lump with apple wood for smoke
Hey FBJ......I found the charcoal, lump, and wood chunks.

While the smoker was coming up to temp, I wiped down the ham with pineapple juice, then sprinkled some seasoning on, and then covered it with pineapple slices, then into a pan with a rack, ready for the smoker.

Into the smoker, temp probes attached, I'm starting to get hungry now.

internal temp..126 ....poured off the pan juices and mixed them with pineapple juice, dark brown sugar, and honey for the glaze. Pouring on the first coating of glaze.

Hot out of the smoker after 3 coatings of glaze

Ready to serve to serve with a bowl of green beans and fingerling potatoes

Sliced ham served with green beans & fingerling potatoes, applesauce, and fresh baked roll with melting butter.

Hope everyone had a great Easter.

    Thanks for lookin'.
    Jim

    Good lookin' eats Jim!

What is the deal with 2 separate lines of charcoal? How does the Spicewine fire anyway? I thought if was a gravity feed, but I guess not.

They get a light smokey taste to them. We eat them with the dinner or like we did this time ( I know no pics ) We heat them up in the nuker and put a couple of the rings on top of a scoop or 2 of Blue Bell vanilla ice cream.
