    Hi all, I cooked up a 12lbs of beef jerky last week, its only the second batch I have done and both have recieved rave reviews for friends and the people I work with.
    I used 2 weber grills in my UDS and also use the 2 wire thingys that keep the charcoal (or heatbeads as we call them in Oz) on the grills to separate them, worked well, I put the bottom grill in, inserted the wire thingys, then sat the top grill on, it sits about 1 1/2 inches above the bottom grill.

    what temps? how long? what you do to them? and my address is 1234 271 b st for you to send me some can you give me some more info we were just debating this cure no cure??

    Basic Homemade Beef Jerky
    INGREDIENTS:
    I used a 6 kilo piece of topside roast, cut into 5mmish thick slices
    4 tablespoons ground black pepper
    1 cup soy sauce

    1 teaspoon onion powder
    4 cloves garlic
    1 tablespoon cider vinegar
    1 teaspoon Worcestershire sauce
    1 teaspoon Tabassco hot sauce

    DIRECTIONS:
    In a large, nonporous bowl, combine the ground black pepper, soy sauce, vinegar, soy sauce, hot pepper sauce and Worcestershire sauce. Mix well and add the meat slices. Cover and refrigerate overnight.

    Prepare an outdoor smoker for 150F and lightly oil grate.
    Lay the meat out on the grill so that the strips do not touch. Beef jerky will be done when the edges appear dry with just a tiny bit of moisture in the middle of the pieces of meat, or about 6-8 hours.

    This is the recipe, I doubled up the ingredients as I used twice as much meat , must admit most of my meat slices varied in thickness and I found 165F worked better for me, I have other recipes I might try (especially the mexican one!!) but this will be my standard and I have been ordered by some friends of mine NOT to change the recipe.

    Dont know what customs will think of me sending you some jerky but if youre willing to do the legwork and let me know I'll send some over
