    Default Cold Cucumber and Onion Salad

    We make this a lot for summer cookouts and picnics. It goes great with most grilled, smoked meats or really most meals.




    Cold Cucumber & Onion Salad

    1 Med Sweet Onion
    1 Cucumber -- About 6-7" Long - 1 1/2 " in dia
    2/3 cup Water
    2 cups Apple cider vinegar
    4 tbs Sugar
    4 cloves Garlic - minced
    1 tsp Salt
    2 tsp Black pepper or Steak seasoning
    3 small Romano Tomatoes -- opt

    1. Dissolve 4 tbs sugar in 2/3 cup of water

    2. Whisk 4 tbs oil with the Apple cider vinegar

    3. Whisk sugar water and vinegar & oil together and pour into a bowl

    4. Add Salt, pepper, and garlic to bowl and whisk together

    5. Peel and slice onion and cucumber and place in bowl

    6. Gently mix together in bowl - if onion & cucumber are not covered with
    juice add vinegar til covered

    7. Cover bowl and place in frig. Stir mixture several times over next 2
    days.

    Cooking Tip: when you taste it after 1 day.
    If you like it sweeter add a little sugar
    If you like it saltier add a little salt
    Do this to taste.

    Cooking Tip: Sometimes we add 3 diced Romano Tomatoes to the mix. adds flavor and color

    Jim, Thanks for the recipe. I was eyeballing the pic of this in one of your dinner threads, I wouldn't have thought to add sugar ..... and I love the idea for substituting steak seasoning for pepper.

    I would always slice cukes place in bowl and add ice cubes and pour Apple Cider Vinegar & a bit of salt over them and eat like that after an hour. Go figure, I never thought about kicking up grandpas basic recipe a couple of nothches.

    I love this stuff in the summertime....very refreshing. Never had it with the tomatoes...I'll have to try that.
