    Smile Early Sunday Morning!!

    Well, after a long rest Bertha is gonna be smokin early on Sunday morning! Rolled up two fattys stuffed with a blend of cheeses! Picked up a Boston butt and spent some time learning about my new injector!
    Wish I had this thing before! It makes things SOOOOOO much easier!

    Am also gonna throw on a couple of burgers for lunch at some point in time and maybe even a steak for lunch next week to see how it turns out!

    Plan is to fire up Bertha at about 4:30-5:00 am and throw on the shoulder. Around 9 or so I will throw on the fattys, burgers, and steak as I have no idea how long they will take.

    Have a mixture of Ash, Cherry, and just a little Oak! The Ash and Oak will be doing most of the heating with some Cherry for flavor! Haven't tried too much with different woods yet as I am still trying to learn Bertha's moods!!!

    Oh well, at least Bertha's happy! LOL

    Will post some pics at the other end of this just to prove that some wood was burned!
    Will also try to remember to get a pic of the Butt after the rub!

    I just tried that Dundee Honey brown. Man was that stuff good

    What a great lookin cut of meat, Looks like your startin on the right foot for tomorrows smoke.

    fattys were stuffed with what kinds of cheese. They look like they are ready to take off!!!

    Cant wait for the finish pics brother

    Got hooked on the Dundee's about 8 years ago at a party. Had never tried it before. Only had 1 as I was on my bike and I don't drink when riding, but have been hooked on it ever since! Never liked dark beers before this one! Guess it only takes one to get you hooked!

    The cheeses in the fatty are 50% mild cheddar and 50% Mexican blend. (Serigenti brand) Last time I made one I did a breakfast thang with eggs and such, it was good but did something more simple this time! (LIKE ME!)

    Also plan on nabbin a few more tree rats while Bertha is doin her thang! Might even hang a few of them in Bertha, if I get them cleaned up in time. Haven't tried smoked tree rat yet!

    I hear it tastes just like chicken!! !

    Also plan on some pig candy! This will be my first try at that but I have been puttin sugar on fryin bacon for at least 3 decades now! I won't say how I learned that trick, but Gomer Pyle USMC had something to do with it! Just showed my age on that one!!

    I don't' know as I would admit to anything that went in my mouth having anything to do with Jim Nabors.

    don't forget to add a little ground red chilis to the candy. Sweet and hot together works.
