    Summer Sausage

    i am now . this is by far the best stuff i've made in 10 years. it has the right bite (tang). its an easy recipe, formulated by some great advice.
    1 hi mtn summer sausage kit (all packets)
    20# lean ground beef or venison (i used coarse grind)
    10# ground pork (not lean, i used coarse grind)
    3 oz eca (encapsulated citric acid), cool term huh?
    1/2 bottle franks hot sauce
    12 oz ice cold buttermilk
    12 oz ice water. i used crushed ice
    20- 1 1/2" callogen casings

    mix all ingredients thoroughly, and stuff in casings.
    let sit 12-24 hours in fridge.

    hang in cooker or oven at 120 cooker temp, no smoke, 1 hour
    bump up heat to 140 and add smoke, 1 hour
    bump up heat to 160, with smoke, 30 minutes
    bump up heat to 180, with smoke to finish. finish is 152 internal.

    i used an offset, w/ paper clips to hang the sausages. i rotated the sausages a few times to get a consistent cook. it took about 6-7hrs.

    when sausages hit 152, pull them, and put in a hot shower to clean the casings. next immediately dump sausages in a big tub of ice water to cool down quick. remove dry, and thats it. i vacuum sealed after a night in the fridge. they should keep for a long time in the fridge without air on them. the tang came from three directions, citric, franks, and buttermilk. this recipe is a keeper, and contains some info from isu, as well as several other hands on cooks here. thanks for turning out the best summer sausage i've ever made. we'll be passing this recipe on to all of the hunters about to start the first deer season(shotgun) tomorrow.

    I'm making 15# of summer sausage today my question is when they reach temp should I ice bath them????

    those look good , hope it was the sausage ready for the fridge over night not the coors though.

    I'm 61 years old. I wandered into one of those one day thinking it was the optometrist. What a surprise I got.
