    Default Nitrites and curing salts question

    I'm about to try making some sausage for the first time. My question is what are the benefits of using curing salts or nitrites if it has to be frozen anyway? And if it is required to use them why aren't they included in the seasoning mixes?

    Yeah I scrolled through every page of the sausage thread and even tried the search function and couldn't find too much talk about the subject that's why I asked the question. I was hoping someone who makes a lot of sausage could help answer the question.
