Pam had a meeting tonight, so I decided to fix a big salmon collar steak and a couple stuffed shells for my dinner

Salmon steak cleaned and ready

Steak covered with mix of raw sugar, coarse sea salt, and ginger. I let this sit on the steak in the fridge for about 4 hours

I made up a couple stuffed shells

I took the steak out of the fridge, shook off the excess sugar mix, and dusted it with FCBP

Keg heating up using RO lump and orange wood

Almost ready after basting with melted butter & lemon juice a couple times
