    Default Smoked Chuck Roast

    I did most of the prep work last night. I seasoned the chuckie with a brisket rub, then put it into the fridge to rest overnight. Then sliced up the veggies and peppers.

    This morning I dusted the chuckie with a little more rub


    Veggies and peppers in a half pan with some beef stock and red wine


    UDS heated to around 250 using RO briqs and pecan wood
    I put the roast on a rack, then set the rack on top of the veggie pan to catch all those good drippings, then it all went into the UDS for a smokey rest


    Roast at 147 IT


    I pulled everything from the UDS. I took the roast off the rack and put it directly on the veggies and peppers


    Then I covered the pan with foil and put everything back into the UDS


    I pulled everything when the roast hit 203 IT. That's when it was probe tender.


    Roast served with potatoes, veggies, and peppers
