Default Sausage & cheese stuffed mushrooms

    Sausage & Cheese Filled mushrooms

    Ingredients
?? (dépends on size) champignons de Paris
4 oz (113g) cream cheese (used Philadelphia)
4 oz (113g) ground breakfast sausage (used home made bratwurst w/smoked mushroom)
    1 TBS rub (used Tatonka)
    ½ cup finely chopped onions
¼ cup finely chopped green jalapeños (used local red Piments de Espelette)
    ½ TBS lemon juice
¼ cup of hand grated Parmesan cheese

I smoked them in the SFB for a little over an hour (the stuffing was precooked). Min temp was 225°F, maxi was 243°F and the average was 231°F.

Try this, it is GOOD !

Yeah Joe, I'm all about that stuffing. I'll save the fungus for you. Maybe they'll make your next chicken taste good!

    Good job Cal!
