    Default Smoked stuffed squid

    Smoked Squid

    The stuffing was ground pork,an egg, an onion, a clove of garlic, a few hot peppers (you guessed it, piment oiseau again), a little caraway seed and some celery salt. Then wrapped in bacon. Smoked for 2 ˝ hours with a mix of pear and peach wood (the guy that gave me the wood didn't keep them separate)

    The sauce added at the end Baby squid, shrimp, mussels, a small onion, home smoked paprika, white wine (next time I will leave it out), EVOO, water, salt, pepper and a little Calvados (apple brandy) all passed in the blender.

    In the SFB (too much stuffing so I made stuffing balls and wrapped them in bacon too.

    Cut open and plated on a bed of Japaneses saba noodles :

    Good but I think it would have been better without the wine.

    Now that is interesting and looks good.
    Hard to find squid in Peculiar, MO, population 4600.
