    This is how I like my eggplant. Grill marks. Rubbed coconut or other high temp oil and it takes it like a sponge. Then season and add another coating of oil. Watch it. Don't do like I do sometimes and snooze with it on a grill.

    Never grilled eggplant. I'm not a huge fan, but maybe if the wife wants some I'd give it a go.

    I can't stomach eggplant Parmesan but grilled it's a new flavor of its own and a very heart healthy side. Low hypoglycemic and packed with fiber. Something I need to be mindful of.

    Just love grilled eggplant, even the next day, cold with a little EVOO poured over it !

    H'mmm. Never tried it cold. Next one I'm lightly coating with some panko over the coconut oil. I like crispy stuff.
