    Default ABT's in the Drum

    A few Jalapeno peppers


    Trimmed, cut in half, cored, and de-seeded


    Filled with pineapple cream cheese mix


    Wrapped in bacon


    Coated with rub


    Into the drum. one of the few times I like to cook at 225°

    Mmmmmm a few of these with be eaten with dinner

    I have not done any either. I am going to have to get on it.

    I noticed that everyone here slices the jalapenos. I normally just cut off the tops, empty them with a small spoon, then stuff them. This looks easier but, is there another reason for doing it that way ?

    P.S. Love that close up, I bit my screen !

    I like the way the pepper cooks and you get a little more filling, but the 2 main reasons are more bacon ( one slice per half, instead of one slice per pepper ) and more area to apply rub to to get a better crust or bark.
