    Default Bacon Monday

    Started a case of pork bellies today. One cured as country sugar, one as maple sugar, and the last as chipotle/pepper. In five days I'll cold smoke it.





    Rubbed and ready for the refrigerator.

    Actually, the whole process will take about 7 days. It will spend at least 12 hrs. cold smoking. After that, I like to hold it for at least one day in the fridge before I slice and package it.
