    Default Smoked/grilled garlic & Tex-Mex pork belly

    Smoked/grilled garlic & Tex-Mex pork belly

    4 slices rubbed with garlic and stacked with garlic slices Hmmmm that sounds familiar.
    6 slices rubbed with Tex-Mex seasoning, then everything into the refrigerator for the night (16 hours).
    Next day, rinsed and into the cold smoker.

    Cold smoke 1 hours with Cherry and Oak. Temperatures : Min - 18C (64F), Maxi 31C (88F), Ave 23,8C (75F). Only 1 hours because she doesn't like too much smoke.

    At this point I guess that I can call it bacon.

    Ready for the night :


    Rinsed and in the cold smoker :

    On the Weber for grilling :


    Over easy :


    and mine ended up in a Tex-Mex flavored BLT (notice the American style bread !) :

    Love it! Is that the way the bread is sold? .. American bread in reference to French bread here. Need a nice bowl of tomato soup to go with it. Its been ages but I like to toast the bread too.

    No chickens were harmed in this statement. But it doesn't mean I didn't want to.

    How did that Wonder bread make it thorough French customs ya'll have Govt regs on what is legally bread ??

    there's a difference from american style an walmart style... i wouldn't touch that wonder bread style white bread with a stick




    but that bacon on the other hand

    Real Bread is Flour, Water, Sourdough starter and Salt.

    The bread is made here the brand name is "Harry's" !! They make "soft", "without crust" and "American sandwich" which is big. It all comes sliced.
    French bread is great for a ham, cheese and french mustard samies but for a BLT or a toasted cheese sammie I prefer slices of an American style loaf.
