Default New Guy from Indian Trail NC here.

Hi there. I'm New-Q-Dude (Scottie Bell), and i am brand new to smoking. My wife bought me a Char-Griller Duo, and i have installed the side fire box. I have heard good and bad about the grill, but, it is so much better than my old propane grill and i believe it will be great to learn on. I was raised with my step dad never using propane, always kingsford. My wife and kids, had never had food over coals before, and now really love it. I'm told they are the best burgers and hotdogs i have ever made.
I had seasoned my CG on Saturday morning, and smoked my first chicken Saturday evening with original kingsford, and some hickory chips that my wife had picked up in a small bag at lowes. It came out pretty good though. The family liked it at least. Crispy skin, and super moist. Cooked for about 3 1/2 hours around 250. I will do some mods to it as i can, but will continue learning on it as it is. Being harder to control temps, and having to watch it quite a bit will just help me learn and make me better i think. Or at least i hope that is the right thinking.
I also already called my buddy at the lube place, and he got me 4 - 55 gal drums, that i picked up yesterday, for a UDS i will collect parts for and put together hopefully in the next month. I will give 2 of the drums to my buddies, keep 1 for my burn barrel, and use the nicest one for my UDS. I can see this being an obsession in a hurry like, with an endless supply of drums from my friend.
I really look forward to all of the knowledge you folks have on this site, and hope to be able to help out newbies too someday. Smoking is something that i have been wanting to learn to do for a very, very long time, and all of your help will be greatly appreciated.

Sounds like the bug bit you hard. Ask any
questions you may have, someone will have the answer hopefully. Pics help with some questions, and we love food, so get those UDS's going and show us some pics.

and step right in! We love to help newbies. And you won't be a newbie for long if you hang around here.

Someone here can help you with CG mods and building drums and anything you wanna cook on 'em. Ask away...
